1 cup almonds, toasted, coarsely ground
3 cups rolled oats, toasted
2 cups dates, pitted and chopped
1/2 cup dried cranberries
3/4 cup almond butter
1/4 cup coconut oil
1/2 cup honey
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1/8 teaspoon allspice
1 teaspoon cinnamon
1 cup water, warmed
1/2 teaspoon sea salt
Directions:
Preheat oven to 325 – if you have a fan, set on LOW
Mis en Place all ingredients; set them all out, measured, before you begin.
In a large mixing bowl, place the pecans, almonds, oats, allspice, cinnamon and salt…and toss together.
Evenly place on sheet pan; place in preheated 325 F oven for approximately 15 minutes or until almonds begin to turn golden brown.
Remove mixture from oven if done by this time; pulse mixture in food processor until lightly chopped; place in large mixing bowl sprayed with PAM and set aside.
Process dates in food processor, pulsing to chop dates – will form a sticky ball.
Heat 1 cup of water on range top; add processed dates and cranberries; allow to soften – drain.
In same saucepan, heat the almond butter, coconut oil, and honey; cream together until smooth; remove from heat and add the extracts.
In the large mixing bowl, mix all ingredients together – wet your hands or wear gloves; mix all ingredients, incorporating evenly.
Line one or two baking dishes with parchment or plastic wrap; evenly distribute “dough” between the dishes.
Cover with plastic wrap and press the dough evenly into each dish; press down using the bottom of a glass (or for DPMR peoples, the bottom of an empty bottle of IPA works well !)
Chill in refrigerator for one hour; remove top plastic wrap; place cutting board on top of dish…invert onto counter top; remove plastic wrap and portiion the bars evenly.
