- 1.5 cup honey
- 1.5 cup peanut butter or other nut butter
Heat in saucepan, while stirring, until melted together
Then stir in:
- 4- 4.5 cups rolled oats
- Half cup coconut flakes
- Half cup shredded carrots
Optional, stir in your own combination of chopped nuts, chocolate, dried fruits or seeds. Suggestions:
Pat into a cookie sheet (sprayed first with non-stick spray). You can also try a mini muffin tin instead. Bake at 325 14-20 min, but peek in the oven frequently after 10 min to make sure the ends are not burning. When you take them out, they will be really soft, but will harden after cooling.
Cut into bars after they are cool.
Wrap individually and freeze until needed.
